Is there a way to have the look left/ right go further than 90º ?
In another sim I have it set to 120º, which still has a slight overlap with the front view. So, no blind-spots and greater awareness of what's around you.

Don't think there is, unless it's in the menu. Using cockpit view and mirrors, and looking left and right, you should have no blind spots?

Did you tried to move the drivers seat in the car as far back as possible and then change the FOV.

Or maybe you can try this app to change the angle of your view:
Real Head Motion

But I'm lazy and have not tried it myself tbh and I didn't even checked if it runs with the actual version of AC
but from the pics it looks like you can set the look left/right angle yourself:

Limitations / Known Issues
In Assetto Corsa
Uncheck "Lock onboard camera to horizon"

RHM uses FreePIE and use the trackIR emulation to move camera onboard, so it will not work with other devices that move the head (TrackIR, Occulus Rift)

Glance left/right look behind don't work anymore even when not running RHM app.
Assetto Corsa detect a trackIR with FreePIE, glance left/right and look behind don't work anymore with the in game binding.
Workaround
Bind your key directly in Real Head Motion software.
If you want to use the in game binding you must uninstall FreePIE, until Kunos add a feature to disactivate TrackIR detection in game.

I haven't tested it, but in My Documents/Assetto Corsa/cfg/camera_onboard.ini there does seem to be a couple of values that might relate to this, namely HEAD_MAX_DEGREES=60, under [ROTATION]. Maybe change that value and see what happens.

Totally forgot to have at first a look in the ini files :)

It works, changed for testing from 60° to 90°:

just read the original question again and P1LOT asked for more then 90°.
So I tested again with 120 and it works too. ;)

While changing the .ini works great
it just doesn't help when you have a racing seat with ears:

Well done for finding this. I just assumed 90º was the normal, but I was meaning not so much overlap to see more to the side.
Yes, the chair ears get in the way. I might try moving the head position forward. I wonder if the seat can be moved back?
AC has a benefit in the 'red arrow' that shows where close competitors are anyway.

There is also HeliCorsa in our apps download, that is really handy as it actually gives you there position and where they are if they are close.

I tried changing the value, but didn't see the difference. That was a few nights ago.

Tonight I found looking left and right doesn't work now. They work in all views except cockpit view. Then I found if I look back first then left or right, that works. Just not able to look to the sides.
Also tried resetting the seat and view position.

I went back into assettocorsa\cfg\camera_onboard.ini and reset it back to 60º, to no avail.
